I like to use mine for chicken enchiladas!

Use the chicken mixture and layer it with tortillas, cheese (monterey jack is really yummy here) and dollops of sour cream. Cook for about 30-45 min. on 350 degrees. Here's a yummy, easy crock pot recipe.

3 chicken breasts (or about 12 tenders)
3 cans of green chiles (or one 16oz jar of Salsa Verde)
1 medium onion chopped finely
1 Tbs. cumin
black pepper to taste
salt to taste
(I like to add a bit of garlic and 1/2 can of chicken stock so it's a bit more "saucey")

Throw everything but the chicken into the pot. Stir it together. Add chicken. Turn on low for 4-6 hours or high for 3-4 hours. Shred chicken with two forks. To make it creamier, add 4 oz of cream cheese, broken up, 30 min. before serving. Stir it in with a whisk after it has had a chance to melt.

Serve over rice (I season with my Costco taco seasonings, a bit of salt and a handful of dehydrated onions). I like to add cheese, avocado slices, tomato slices and sour cream on top, but not everyone likes that stuff (including my hubby).
