another yummy chicken dish

yummy and easy! just a few ingredients and doesn't take a lot of time!

served over rice and with a few veggies and fruit ... MMMMM! (don't be fooled by their smiles - none of them loved it! bah!)
recipe:
1/2 c. brown sugar
1/2 c. crushed pineapple with juice
1/2 c. white vinegar
2 tbsp. flour
2 tbsp. soy sauce
1/2 tbsp. worschershire sauce
1/2 c. ketchup
set out 6-8 chicken breasts to thaw for 1 hr. sprinkled with garlic salt (both sides)
in sauce pan - dissolve flour in vinegar until lumps are gone.
add the rest of the ingredients and cook to a boil.
cut chicken into big chunks and place in 9x13 pan.
pour sauce over chicken and cover with foil.
bake at 350 for 20 minutes then remove foil and bake for 20 more minutes.
serve over rice!
voila! Yum!

How are you guys with Mexican flavors? Here's a yummy, easy crock pot recipe.

3 chicken breasts (or about 12 tenders)
3 cans of green chiles (or one 16oz jar of Salsa Verde)
1 medium onion chopped finely
1 Tbs. cumin
black pepper to taste
salt to taste
(I like to add a bit of garlic and 1/2 can of chicken stock so it's a bit more "saucey")

Throw everything but the chicken into the pot. Stir it together. Add chicken. Turn on low for 4-6 hours or high for 3-4 hours. Shred chicken with two forks. To make it creamier, add 4 oz of cream cheese, broken up, 30 min. before serving. Stir it in with a whisk after it has had a chance to melt.

Serve over rice (I season with my Costco taco seasonings, a bit of salt and a handful of dehydrated onions). I like to add cheese, avocado slices, tomato slices and sour cream on top, but not everyone likes that stuff (including my hubby). YUMMY!!

P.S. if you make extra chicken, freeze it for another dinner. I like to use mine for chicken enchiladas!

Use the chicken mixture and layer it with tortillas, cheese (monterey jack is really yummy here) and dollops of sour cream. Cook for about 30-45 min. on 350 degrees. YUMMY!!

Hey, what a great dinner Em! I was gonna say 'woah now, the shaw kids ate THAT?!' until I saw the last sentence typed. Oh well, they don't know what's good for em'. Andy is there daddy and has fully tainted them. Keep up the healthy dinners anyways, they will learn to love em, and you will all get healthy together! Great job Em!

those little boogers! you should have called it "pineapple" chicken...then maybe they could have been teased into liking it! oh well...I'm going down to make me a yummy pineapple chicken salad for a snack!

So what is the recipe...left to my own devices it would probably taste gross!!!
